A great crust is a labor of love, not chemistry. We use only all-natural, premium high-gluten flour that is strictly never bleached and never bromated. By avoiding these common chemical aging agents, we keep our dough clean and straightforward. Then, we let time do the work: through a slow fermentation process, we develop a crust that's naturally flavorful and light, exactly how bread was meant to be.
